Hamachi

with Soy Sucrée Sauce

Ingredients:
Hamachi | peas | clams

Preparation:
Hamachi is a luxury fish. It is the back part of a fish. Fry the fish until the skin is golden brown/crispy. Remove from pan and cool back in ice water (or a container of water with ice cubes). Cut the fish into slices of the same size. Garnish with green peas, cockles, sauce over it and ready.
